Despite staying an extra three hours at work last night and not getting home until midnight I got up early enough to bake this morning. I made a batch of broccoli cheddar mini muffins. I ground the flour in the blender (I was using up a package of wheatberries and some rolled oats). The batter was also made in the blender which meant I didn't have to chop up the broccoli. I just put chunks in the blender and it took care of the rest. I probably could have put in more cheese but I didn't want them gooey. For lunch I will be having some of these along with chicken salad made with a delicious mustardy secret sauce I got from Cora Cora, a Peruvian restaurant. I asked for extra sauce because I thought it would be great in chicken salad instead of mayo.
