Today is my "Sunday" and I had nothing planned for the morning so I didn't set the alarm when I went to bed last night. I slept until 10AM! I went to bed around 11:30 PM so I got a LOT of sleep last night. I thought I would wake up around 8 or 9 but my body said "No".
Last night I made some scalloped potatoes using my Instant Pot to speed the cooking. Today I have to do something with two large zucchini. I will probably make soup out of one of them and roast the other, possibly doing a take on lasagna.
