I've been trying to remember to use up meat in the freezer. I mostly fail because I don't remember to take it out to defrost. I was successful today. Last week I bought some jarred Tikka Masala sauce and two days ago took out some chicken breasts to defrost. I cut up the breasts, browned them, put them in a bowl with the sauce and pressure cooked it for about five minutes. The sauce is good enough.....not as good as what I get at an Indian restaurant of course. It's good enough that I might get it again. I had it over rice which I bought from a one of the nearby Chinese restaurants because I was too lazy to make rice. Well actually I was too lazy to clean to the pot I would have made the rice in. Rice is easy....1 Cup rice, 2 Cups water...bring to a boil, reduce heat and simmer, covered for 20 mins.
