Well, it isn't an official holiday but I did make an Italian inspired congee in my electric pressure cooker last night.  I was going to wait but as I was just getting into bed I decided I wanted it for lunch.  So I threw the ingredients into the InstantPot and went to bed.  I tried a little bit this morning.  It isn't bad.  I'll make it again when I have more fresh veggies to include.  I'll put my recollections of the recipe on the appropriate page.
