21-MAR-19 Hot Dish Thursday

After taking a break last week, I'm back to trying out different versions of the Minnesota Hot Dish.  Today's version is made with ground chicken, frozen asparagus spears and jarred Alfredo sauce.  I put some shredded fondue cheese mix between the meat mixture and the tater tots.  And I did add a little bit of seasoning....poultry seasoning, dried garlic, fried garlic, roasted garlic powder, freeze dried ground shallots, dried minced onion and some black pepper.  I put in a little bit of lower sodium chicken broth to it wouldn't be too thick.  I think it will turn out fine as long as it doesn't burn on the bottom of the pan.  I'm a little worried about the Alfredo sauce burning but hopefully the chicken broth and any juice from the asparagus will help prevent that. 

(I used that particular blend of cheese because it is what I had on hand, not because I thought it was the perfect addition. I was actually out shopping for cheese (and tater tots because it turns out I didn't have an extra bag in the freezer) when I remembered I had bought it on sale thinking I would try to make cheese fondue.  For the record I have yet to try making the cheese fondue but I have used the cheese in a couple of things. 
I no longer long for the old view!

I am having a salad for lunch/dinner from Mad Greens. They make a much better salad there than I could ever make for myself.

The latest iteration of the Hot Dish sounds pretty good, although I'd replace the asparagus with green beans (or another vegetable I don't despise).

I've been uping my intake of salad lately.  Been lax for the past few days but plan on hitting the salad bar on my way into work tomorrow. 

The hot dish is OK.  I really want more veggies in it.  And the sauce....well it is shelf stable Alfredo sauce.  I may try this again with fresh Alfredo sauce and different veggies.
