I'm working the closing shift tonight for my co-worker, Joanne.  Her father passed away a week ago and she is trying to spend as much time with her mom as she can.  How could I not help out?

This morning/afternoon I made a Zucchini Stew in the Instantpot.  I chopped up zucchini, potato, sweet potato, butternut squash, onion, a couple of carrots, green pepper, tomatoes,  and then added various herbs and spices and tomato paste and anchovy paste.  It cooked for 15 mins.  I'm letting the pressure release on it's own to allow for a little more cooking time.  It smelled good as it was coming up to pressure.  I hope it tastes good because there is a LOT of it.  (I nearly filled the 6 quart pot)
